Craft lager has firmly reclaimed its place on tap lists across the country. While beer drinkers are still reaching for IPAs, they are also increasingly looking for lighter, sessionable products. Lagers are a versatile family of styles and can cater to a diverse range of customers and palates. Ranging from light to full-bodied, golden to dark, the craft lager is fast becoming the preferred beer of many consumers.

Lager’s crisp, clean taste and refreshing qualities have made it a go to beer for any occasion, from a night out to a summer barbecue. What really sets lager apart from other styles comes down to brewing methods, process control, and a little bit of patience.

The main things to consider when brewing lagers are ingredients, brewing conditions, and the fermentation process.

Ingredients

While it is common to think that a lager mash bill is simple and may only be 1 or 2 types of malt, this is not always the case. As lagers grow in popularity, so do the ingredients and options the brewer has to craft a unique product. Smoked malts, adjuncts like rice, or corn, and especially various yeast strains can all contribute to a clean, refreshing, unique product for the customer.

Brewing

How you brew your lager is always up for debate. As the age-old brewing adage goes “It depends”. Do you do a decoction mash? What about just a single infusion, or the standard step mash in a conversion vessel? This discourse will likely continue as long as the style persists, suffice to say, the brewing method is up to the brewer and experimentation is never a bad thing.

Fermentation and Conditioning

This is where lager either earns its reputation or loses it. Unlike ales, which ferment warm and fast, lagers rely on cold-fermenting yeast strains — typically in the 45–55°F range — over a longer, slower timeline. That extended fermentation window, followed by an equally important cold conditioning (lagering) period, is what produces the clean, crisp finish the style is known for. Compress that timeline or let temperatures drift, and you don’t just get a mediocre lager — you get one that actively reveals the problem. Sulfur, acetaldehyde, diacetyl: lager doesn’t bury its off-flavors. It puts them on display.

That unforgiving nature makes fermentation management the most consequential variable in the process. A temperature swing that might go unnoticed in a robust IPA can fundamentally alter a lager’s flavor profile. Yeast health is equally critical — cold fermentation already stresses your yeast, and any additional strain from underpitching, poor oxygenation, or nutrient deficiency compounds quickly. The conditioning phase demands its own discipline: sufficient time at cold temperatures for diacetyl reduction and clarification, with enough visibility into the process to know when the beer is actually ready — not just when the calendar says it should be.

That last point is where many breweries are still operating on instinct or infrequent manual checks when the style demands something more. Continuous fermentation intelligence — tracking parameters like temperature, conductivity, and dissolved oxygen in real time throughout the fermentation and conditioning cycle — gives brewers the early-warning visibility to catch deviations before they become quality or yield losses. For a style with this little margin for error, fermentation intelligence isn’t a luxury add-on. It’s part of what makes a great lager consistently reproducible.
