Fermentation is the heart of brewing and of course needs to be paid attention to with care. Even the most minor shifts or deviations can throw off a batch and turn an award-winning beer into a costly drain pour. Leveraging AI can offer clear and fast, predictive insight—and at scale.

How AI Changes the Fermentation Game

  • Real-time data collection: Modern sensors track key factors inside the tank every few minutes for a live view. Data is automatically uploaded to a cloud platform for a real-time look inside each tank. The SennosM3 sensor tracks eight fermentation metrics.
  • Pattern recognition: AI uses machine learning to spot patterns in the data. AI then learns from that data and offers proactive, automated insights to improve processes.
  • Predictive analytics: By comparing current data to thousands of past batches in Sennos’s database, AI can forecast when fermentation will be complete. Predictive analytics uses past data to predict results and guide next steps. It can even alert brewers if a batch is running slow or if a problem is likely to happen, and provide the relevant insight to course correct.
  • Actionable alerts: If the yeast slows or heat drifts, AI sends a real-time alert. Brewers can address issues before they spiral, as well as cut waste along the way. AI does not replace the brewer’s skill or intuition—it only makes it stronger.

Beyond DO: How Sennos Became Mother Earth’s Complete Fermentation Intelligence System

At Mother Earth Brew Co., rapid growth came with a challenge: how to scale production while keeping the signature consistency of their flagship beers. Chris Baker, Director of Brewing Operations, recognized that manual sampling, often done once or twice daily, simply wasn’t sustainable and set out looking for a dissolved oxygen (DO) measurement tool. After partnering with Sennos to deploy the Sennosystem, Chris realized he was able to fill a role in his brewery that he never had before. The Sennosystem’s in-tank sensor, the SennosM3, not only exceeded Chris’ expectations as a DO monitor, but it also continuously measures critical parameters such as gravity, pH, conductivity, temperature, and pressure at consistent intervals. Having real-time data like this would take a team of experienced brewers hours to replicate manually, especially in a large production facility, and nearly impossible across multiple sites.
